Cheeky pizza rebel riles up Inglewood area

A pizza rebel of sorts, Without Papers is named in part to snub the strict rules set by the Neapolitan Pizza Association and to celebrate the Italian heritage of the owners, who also run Inglewood mainstay Sugo.

This cheeky restaurant churns gourmet thin-crust pizza out of a gorgeous red oven.

The Hogwild ($18) is hands-down one of Calgary’s best restaurant pizzas. Spicy wild boar sausage and prosciutto lend a manly, salty aroma. Braised rapini and friulano cheese give it a nutty edge on top of a rich roasted garlic wine sauce.

Meanwhile, tasty roasted free-range chicken, eggplant, artichoke hearts and cherry tomatoes dress up the Baby Doll ($18) with a wink of goat cheese.

And what of the crust? Crispy to the bite, and solid under all the toppings.

There’s homemade ice cream too — pistachio stands out — which is generously scooped into root beer, cream soda or cherry cola floats ($7).
