Emma Smith has created the kind of product that leaves you satisfied on many levels.  Her ‘feel good’ chocolate is made with the highest quality ingredients using artisan techniques. The main difference between ZIMT and most other chocolate companies? The former makes their own chocolate from the cocoa nib. It’s a huge, messy process that lasts over 36 hours -- but it’s worth it.

For sweetness, the 27-year-old entrepreneur uses coconut sugar, which lends a caramel-y undertone. The other significant contributor to Emma’s formula is cacao butter, adding a rich and creamy texture to the final product. Also, Emma has remained true to the dark chocolate tradition by skipping the dairy products altogether, resulting in an utterly luscious and bold chocolate flavour.

Twelve ZIMT products are currently available for your indulgence (available online and in dozens of stores around the city) -- my favourites are the Dark Chocolate Coconut Creme Truffles in a trio of wildly unique, winning flavours: Lemon Basil, Citrus Earl Grey and Salted Caramel Creme.
