Tomato & Basil Salad

20 MINUTE SUPPER CLUB

Tomato & Basil Salad

Ingredients:
5 tomatoes or a combination of cherry and regular tomatoes
10 tablespoons of chopped fresh basil
2 small red onions or shallots
1 cup of mini bocconcini cheese balls
4 tablespoons of good quality balsamic vinegar
7 tablespoons of extra virgin olive oil
 
Method:

1.  Wash and dice tomatoes

2.  Chop fresh herbs

3.  Peel and dice onions

4.  Combine vinegar, oil, and basil and toss to taste in a large non-reactive bowl

5.  Add tomatoes, shallots, bocconcini cheese and toss to coat

6. Serve right away, or let the dish sit for about an hour in the fridge to marry the flavours
