Asian BBQ Beef

Ingredients:

  • 1 flank steak, trimmed
  • 1/2 cup orange juice
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tbsp plus 1 tsp light brown sugar
  • 1 tsp ground ginger
  • 1/4 tsp red pepper flakes
  • 1 red pepper, slivered
  • 2 scallions, thinly sliced
  • 2 tbsp chopped fresh mint
  • 1/2 tsp salt
  • 227 mL can sliced water chestnuts, drained
  • 1 cup brown rice
Method:
  • 1. Thinly slice flank steak across grain for 8 thin slices.
  • 2. Combine 1/4 cup orange juice, soy sauce, sesame oil, 1 tbsp brown sugar, ginger and 1/8 tsp red pepper flakes in shallow bowl. Add beef slices, tossing to coat. Cover and refrigerate 1 hour.
  • 3. Combine red pepper, scallions, mint and salt with remaining orange juice, 1 tsp brown sugar, and 1/8 tsp red pepper flakes. Add chestnuts, toss, and refrigerate until serving time.
  • 4. Cook brown rice. Fluff with fork.
  • 5 Preheat broiler. Lift meat from marinade and thread onto eight skewers. Place skewers on broiler pan and broil 4 in. (10 cm) from heat, brushing with marinade after 2 minutes. Turn skewers and broil 2 minutes. Serve skewers on rice with water chestnut salad.
