Grilled peach, arugula and goat cheese salad.

Serves 6.

Ingredients

Dressing

• 2 Tbsp orange juice concentrate
• 2 Tbsp olive oil
• 1 Tbsp honey
• 1 Tbsp lemon juice
• 2 tsp sesame oil
• 2 tsp soy sauce
• 1 tsp minced garlic
• 3/4 tsp minced ginger root
• Salt and pepper

Salad

• 2 large ripe peaches sliced in half, pit removed
• 6 cups arugula or baby spinach
• 1 small romaine head, chopped into bite size pieces
• 1/2 cup sliced red onion
• 1/3 cup toasted pecan halves
• 2 oz crumbled goat cheese

Directions

1. Dressing: Combine all the dressing ingredients in a small bowl.

2. In a hot grill pan or barbeque, grill peaches for two minutes per side. Remove to cool. Cut into  wedges.

3. In a large serving platter, combine lettuces, onion, pecans and goat cheese. Add dressing and mix well.
