Moroccan Chickpea Salad

Ingredients:
• 1 stalk celery, diced
• 1 green pepper, diced
• 1 med. tomato, diced
• 1 med. onion or 6 green onions, diced
• 1 can chick peas, drained (19 oz)
• 1/2 cup of feta cheese

Dressing:
• 2 tbsp olive oil
• 3 tbsp red wine vinegar
• 2 tbsp fresh lemon juice (about 1/2 lemon)
• 1 tbsp fresh parsley
• 1 tsp fresh mint
• 1 tbsp & 1 tsp dried ground cumin
• Salt and pepper to taste

Method:
Toss diced vegetables and drained chickpeas.

Stir dressing ingredients together. (Dressing will look thick and muddy). Pour over veggies and toss.
