Coconut-Oatmeal bars with Chocolate Chips
Pack these in your bag and eat them on the way to work.
INGREDIENTS:
• 60g (2oz) unbleached plain flour
• 1/4 tsp baking powder
• 1/4 tsp fine sea salt
• 115g (4oz) rolled oats
• 115g (4oz) unrefined light brown sugar, lightly packed
• 60g (2oz) dried, unsweetened, dessicated coconut
• 60g (2oz) bittersweet or semisweet chocolate chips
• 85g (3oz) unsalted butter, melted and cooled to room temperature
• 1 large egg, lightly beaten
• 1/4 tsp natural vanilla extract
METHOD:
Preheat the oven to 180°C (350°F/Gas 4). Lightly oil an 8in (20cm) square baking tin and set aside.
Sift the flour, baking powder, and salt into a mixing bowl. Stir in the oats, brown sugar, coconut, and chocolate chips. Stir together the melted butter, egg, and vanilla, then add to the flour mixture and stir just until blended.
Avoid mixing more than needed. Transfer to the prepared pan and level the surface.
Bake until slightly risen, golden, and just firm to the touch, about 25 minutes. Put the tin on a rack and let cool before cutting into triangular or rectangular bars or squares.
